Someday vermouth

someday vermouth is made in partnership with someday bar in portland, oregon.

For this limited release we started with our fresh Champagne Reinette cider and fortified it with Sagardo brandy flavored with 5 pounds of fresh bergamot for a big citrus kick. Dried artichoke flowers and fresh cardoon leaves give a subtle bitterness, perfect alongside the dried Provençal rosemary we added. We tripled down on the delicious herbal vibes by running a portion of the brandy through the still a second time with loads of fresh rosemary, and sweetening the vermouth with a house made thyme simple syrup.
